Apple Cheesecake

 

Ingredients

Crust

  • 1/2 cup rolled oats or natural granola
  • 1/4 cup nuts (almonds or walnuts work great)
  • 2 tsp almond butter, peanut butter, or melted coconut oil
  • 1 tsp cinnamon
  • 1 tsp maple syrup or honey (optional, for binding and flavor)


Filling

  • 2 scoop our protein powder
  • 200g cream cheese (light or vegan alternative)
  • 1/2 cup Greek yogurt (or thick plant-based yogurt like coconut)
  • 1 tsp vanilla extract
  • 1/2 apple, finely chopped
  • 1/2 tsp cinnamon + pinch of nutmeg
  • 2–3 tsp maple syrup, honey, or blended dates (optional, to taste)

Instructions

  1. Make the crust: Blend or process the oats, nuts, cinnamon, and almond butter until crumbly but sticky. Add a bit of syrup if it needs help binding. Press this mixture into the bottom of a small springform pan or lined container. Place in the freezer while you prepare the filling
  2. Prepare the filling: In a bowl, mix the cream cheese, yogurt, protein powder, vanilla, spices, and sweetener until smooth and creamy. Stir in the chopped apple (you can sauté it with cinnamon beforehand for more flavor, or leave it raw for crunch)
  3. Assemble the cheesecake: Pour the filling over the chilled crust and smooth out the top
  4. Freeze: Place the cheesecake in the freezer for at least 4–6 hours, or overnight, until fully firm
  5. Serve: Let sit at room temperature for 10 minutes before slicing. Top with extra apple, cinnamon, chopped nuts, or a drizzle of maple syrup if desired
